Market Application: 
Sodium Acid Pyrophosphate is mainly used in the bakery industry as a leavening agent. May also be blended with other phosphates and used for water retention in processed meats, and used to maintain the appearance and texture of uncooked fruits and vegetables.  Water treatment- sequestering and lead control and reducing black water control and protecting the color of potato for French fries.
