Monk Fruit Extract is composed of various non-caloric compounds that are extracted from the juice of the Luo Han Guo Fruit. Mongroside V is the primary component of the extract and it is 250 times as sweet as sucrose and it is a very effective sugar reduction sweetener. The extract is often mixed with inulin or Erythritol for applications that require reduced sweetness. Its stability at high temperatures allows Luo Han Guo extract to be used in baking applications when aspartame would be unsuitable.
